Doughs are at the heart of our work. Every day I study them, check them, and follow them closely: temperature, hydration, resting time, and every variable that can influence the final result. There are no automatisms and no shortcuts. There is work made of time, attention, and respect. This is how our three doughsare born.

Why we do what we do

Pinsa Club was born from a precise choice: to tell a true story, made of working hands, technique, and time.

A journey that starts in Rome and reaches the Langhe without forced adaptations. When we arrived here, Roman pinsa was still little known. So were sautéed chicory, supplì, coppa di testa, and a way of using pecorino that belongs only to Rome. We never considered simplifying. We chose to remain faithful.

Every dough is a balance of living elements: water, temperature, resting time. Every detail matters — especially the ones you cannot see.

We are not here to follow a trend, but to build something that lasts. Quietly, with coherence.
