Structure: very thin, rolled out with a rolling pin, without internal air pockets.
Versatility: performs best with classic pizzas with sauce and mozzarella, which add moisture to the base.
Structural limit: not suitable for gourmet toppings served raw or without moisture: its thin structure, without air pockets, tends to dry out.
Ideal if: you love traditional Roman pizza, crisp and straightforward.

La Pacchia
Stuffed focaccia with mortadella, burrata stracciatella, and freshly grated lemon zest.
We don’t use pistachio crumbs. Lemon zest cleanses the richness of the mortadella and creates balance.
La Manzo Criminale
Focaccia with arugula, Valtellina I.G.P. bresaola, and shavings of Parmigiano Reggiano.
La Vespasiana
Stuffed focaccia with arugula, Royale salmon, Philadelphia cream cheese, and a lemon garnish.
La Amor
White base with smoked provola, mozzarella, yellow Pachino tomatoes, burrata stracciatella, sun-dried tomatoes, and basil.
“Amor” is Rome spelled backwards. One of our creations: balance between sweetness, smokiness, and freshness in shades of yellow and red.
